Ingredients

  • 400 ml Coconut milk
  • 200 ml Heavy cream
  • 80 g Granulated sugar
  • 10 g Unflavored gelatin powder
  • 50 ml Water
  • 1 tsp Vanilla extract
  • 20 g Toasted coconut flakes
  • 100 g Fresh berries for serving

Directions

Step 1

Begin by blooming the gelatin. Pour the water into a small bowl and sprinkle the gelatin powder evenly over the surface. Let it sit for about 5 minutes until it becomes spongy.

In a saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally until the sugar has completely dissolved and the mixture is hot but not boiling.

Remove the saucepan from heat and immediately stir in the bloomed gelatin. Mix well until the gelatin is fully dissolved into the coconut milk mixture.
