Ingredients

  • 4 large egg whites
  • 200 grams granulated sugar
  • 100 grams unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon cream of tartar
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 250°F (120°C) and line two baking sheets with parchment paper.

In a large, clean mixing bowl, add the egg whites, cream of tartar, and salt.

Step 3

Using a hand mixer or stand mixer, beat the egg whites on medium speed until they are foamy.

Step 4

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the mixture. Increase the speed to high and beat until stiff, glossy peaks form. This process should take about 5-7 minutes.

Step 5

Gently fold in the vanilla extract and shredded coconut using a spatula, making sure to retain as much air in the meringue as possible.

Step 6

Spoon or pipe the meringue mixture onto the prepared baking sheets, forming small dollops approximately 1 1/2 inches in diameter and spaced about 1 inch apart.

Place the baking sheets in the preheated oven and bake for 90 minutes. Do not open the oven during the baking process.

Step 8

After 90 minutes, turn off the oven and allow the meringues to cool completely inside the oven. This will help them dry out and become crisp.

Once cooled, carefully remove the meringues from the parchment paper and store them in an airtight container at room temperature for up to one week.
