Ingredients

  • 120 grams Unsalted butter
  • 120 grams All-purpose flour
  • 100 grams Granulated sugar
  • 30 grams Desiccated coconut
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Coconut extract (optional)
  • 2 tablespoons Powdered sugar (for dusting)
  • 10 grams Butter (for greasing the molds)

Directions

Step 1

Melt the unsalted butter in a small saucepan over low heat or in the microwave, then set it aside to cool slightly.

Step 2

In a mixing bowl, whisk together the all-purpose flour, granulated sugar, desiccated coconut, baking powder, and salt until evenly combined.

Step 3

In a separate bowl, beat the eggs until frothy. Add the vanilla extract and coconut extract (if using), and mix well.

Step 4

Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Step 5

Gently fold in the melted butter until incorporated. The batter should be smooth but thick.

Step 6

Cover the bowl with plastic wrap and refrigerate the batter for at least 30 minutes. This step helps ensure the characteristic hump forms during baking.

Step 7

Preheat your oven to 200°C (390°F) and grease a madeleine pan generously with softened butter.

Step 8

Spoon about one tablespoon of batter into each madeleine mold, filling them about three-quarters full.

Step 9

Bake for 8-10 minutes, or until the edges are golden brown and the centers spring back when lightly pressed.

Step 10

Remove the pan from the oven and allow the madeleines to cool for 2 minutes in the pan before carefully unmolding them onto a cooling rack.

Step 11

Dust the cooled madeleines with powdered sugar before serving. Enjoy with a cup of tea or coffee!
