Directions

Step 1

Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the sweetened shredded coconut, egg whites, granulated sugar, vanilla extract, and kosher salt. Mix thoroughly until the coconut mixture is evenly moistened and holds together when pressed.

Use a tablespoon or a small cookie scoop to form small mounds of the mixture, about 1 1/2 inches in diameter. Place the mounds on the prepared baking sheets, spacing them about 1 inch apart.
