Ingredients

  • 2 cups Freshly grated coconut
  • 1 cup Grated jaggery
  • 1 tablespoon Ghee (clarified butter)
  • 1 teaspoon Cardamom powder
  • 2 tablespoons Chopped nuts (optional, e.g., cashews, almonds)

Directions

Step 1

Grease a square or rectangular dish with a little ghee and set it aside. This will be used to set the barfi.

Step 2

Heat a heavy-bottomed pan on medium heat and add 1 tablespoon of ghee. Let it melt.

Step 3

Add the freshly grated coconut to the pan and sauté for 2-3 minutes until it slightly softens, but avoid browning it.

Step 4

Lower the heat and add the grated jaggery to the pan. Mix well, stirring continuously until the jaggery melts and combines evenly with the coconut.

Step 5

Continue cooking the mixture on low heat for about 8-10 minutes, stirring frequently, until it thickens and starts leaving the sides of the pan.

Add the cardamom powder and mix well. If using chopped nuts, add them at this stage and mix them into the mixture.

Transfer the mixture to the greased dish and spread it evenly using a spatula or the back of a spoon. Flatten the top to create a smooth layer.

Allow the mixture to cool for 10-15 minutes at room temperature. Once it has set but is still slightly warm, cut it into square or diamond shapes using a sharp knife.

Let the barfi cool completely before gently removing the pieces from the dish. Store in an airtight container for up to a week.
