Ingredients

  • 400 grams Desiccated coconut
  • 397 grams Sweetened condensed milk
  • 300 grams Powdered (icing) sugar
  • 1 teaspoon Vanilla extract
  • 3 drops Red or pink food coloring

Directions

Step 1

Line an 8-inch (20 cm) square cake tin with parchment paper, allowing some overhang for easy removal later.

Step 2

In a large mixing bowl, combine the desiccated coconut, sweetened condensed milk, powdered sugar, and vanilla extract. Mix until you get a uniform, sticky mixture.

Step 3

Divide the mixture evenly into two separate bowls.

Step 4

In one of the bowls, add the food coloring (start with 3 drops, but you can add more for a deeper color). Mix thoroughly until the color is evenly distributed.

Step 5

Press the white mixture firmly into the prepared cake tin, spreading it out in an even layer using the back of a spoon or a spatula.

Step 6

Next, layer the pink (or colored) mixture on top of the white layer, pressing it down firmly and evenly.

Step 7

Cover the tin with plastic wrap and refrigerate for at least 3 hours, or until the coconut ice is set and firm.

Step 8

Once set, use the parchment paper overhang to lift the coconut ice out of the tin. Place it on a cutting board.

Step 9

Cut the coconut ice into small squares or rectangles using a sharp knife.

Step 10

Store the candy in an airtight container in a cool place for up to 2 weeks. Enjoy!
