Ingredients

  • 200 grams Granulated sugar
  • 400 milliliters Coconut milk
  • 250 milliliters Whole milk
  • 15 grams Fresh ginger root (grated)
  • 4 Eggs
  • 2 Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1000 milliliters Hot water

Directions

Step 1

Preheat your oven to 175°C (350°F).

Step 2

In a saucepan over medium heat, melt the granulated sugar. Stir constantly until the sugar turns a deep golden brown and liquifies into caramel (about 5-7 minutes).

Step 3

Carefully pour the caramel into the bottom of a 9-inch round flan or pie dish, tilting the dish to coat the bottom evenly. Set aside to harden.

In a mixing bowl, whisk together the coconut milk, whole milk, eggs, egg yolks, grated ginger, vanilla extract, and salt until fully combined. Strain the mixture through a fine sieve into another bowl to remove any ginger solids and ensure a smooth custard.

Gently pour the custard mixture over the hardened caramel in the flan dish.

Place the flan dish into a large roasting pan. Pour the hot water into the roasting pan, surrounding the flan dish, until the water reaches halfway up the sides of the dish (this creates a water bath).
