Ingredients

  • 2 cups Coconut milk
  • 1 cup Heavy cream
  • 0.75 cup Granulated sugar
  • 2 tablespoons Cornstarch
  • 0.5 cup Unsweetened shredded coconut
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, combine the coconut milk and heavy cream. Heat over medium heat until just beginning to simmer, but do not boil.

Step 2

In a small bowl, mix together the granulated sugar and cornstarch.

Step 3

Gradually whisk the sugar-cornstarch mixture into the coconut milk and cream mixture until fully incorporated.

Step 4

Continue to cook the mixture, stirring constantly, over medium heat until it thickens slightly, about 5 minutes. It should coat the back of a spoon.

Step 5

Remove the saucepan from the heat. Stir in the shredded coconut, vanilla extract, and salt.

Step 6

Let the mixture cool down to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.

Step 7

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.

Step 8

Transfer the gelato into an airtight container and freeze for at least 2 hours to firm up.

Step 9

Serve scoops of coconut gelato in bowls or cones, garnished with additional shredded coconut if desired.
