Ingredients

  • 2 cups Shredded unsweetened coconut
  • 1 cup Dried dates (pitted)
  • 0.5 cup Dried apricots
  • 0.5 cup Dried cranberries
  • 0.5 cup Almonds
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Coconut oil
  • 0.5 cup Optional: Extra shredded coconut for coating

Directions

Step 1

In a food processor, combine the pitted dried dates, dried apricots, dried cranberries, and almonds. Pulse until the mixture is finely chopped and starts to clump together.

Step 2

Add the shredded unsweetened coconut, honey, vanilla extract, and coconut oil to the food processor. Blend until the mixture is well combined and forms a sticky dough-like consistency.
