Ingredients

  • 2 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.75 cup shredded sweetened coconut
  • 0.75 cup dark chocolate chips
  • 1 large egg
  • 0.5 cup coconut milk (full-fat, canned)
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar, for sprinkling (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded coconut and dark chocolate chips until evenly distributed.

Step 5

In a small bowl, whisk together the egg, coconut milk, and vanilla extract. Pour the wet ingredients into the dry mixture.

Step 6

Use a wooden spoon or spatula to gently combine the wet and dry ingredients until a rough dough forms. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gather it into a ball. Flatten it into a disc approximately 1 inch thick and 8 inches in diameter.

Step 8

Cut the disc into 8 equal wedges using a sharp knife or bench scraper. Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart.

Step 9

If desired, sprinkle the tops of the scones with coarse sugar for extra texture and sweetness.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the scones are lightly golden on top.

Step 11

Remove the scones from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Serve warm or at room temperature with your favorite jam, butter, or on their own. Enjoy!
