Ingredients

  • 3 cups Self-raising flour
  • 0.5 cups Shredded coconut
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cups Coconut milk
  • 2 tablespoons Butter
  • 0.25 cups Extra self-raising flour (for dusting the work surface)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the self-raising flour, shredded coconut, granulated sugar, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

Using your fingers, rub the butter into the flour mixture until the texture resembles fine breadcrumbs.

Step 4

Make a well in the center of the dry ingredients and pour in the coconut milk. Using a wooden spoon, stir until the mixture comes together into a soft dough.

Step 5

Lightly flour a clean work surface with the extra self-raising flour. Turn the dough out onto the surface and gently knead it a few times until it’s smooth. Be careful not to overwork the dough.

Step 6

Shape the dough into a round disc approximately 8 inches (20 cm) in diameter and 1.5 inches (4 cm) thick, then transfer it onto the prepared baking tray.

Step 7

Using a sharp knife, score a shallow cross on the top of the dough. This traditional pattern allows the damper to bake evenly.

Step 8

Bake the damper in the preheated oven for 20-25 minutes, or until the top is golden brown and it sounds hollow when tapped on the bottom.

Step 9

Remove the damper from the oven and let it cool slightly on a wire rack. Serve warm or at room temperature, with butter, jam, or honey if desired.
