Ingredients

  • 200 grams All-purpose flour
  • 115 grams Unsalted butter, softened
  • 50 grams Granulated sugar
  • 3 large Eggs, room temperature
  • 400 grams Sweetened condensed milk
  • 240 ml Coconut milk
  • 2 teaspoons Vanilla extract
  • 60 grams Shredded sweetened coconut
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving an overhang for easy lifting later.

Step 2

In a medium bowl, combine the all-purpose flour, granulated sugar, and a pinch of salt. Add the softened butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 3

Press the mixture evenly into the prepared baking dish to form the crust. Use the back of a spoon or your hands to make sure it’s packed tightly and evenly. Bake the crust for 15 minutes until lightly golden. Remove and let cool while preparing the custard.
