  • 400 ml Coconut milk
  • 240 ml Heavy cream
  • 100 g Granulated sugar
  • 4 pieces Large eggs
  • 1 tsp Vanilla extract
  • 1 pinch Salt
  • 2 tbsp Unsweetened shredded coconut (optional, for topping)

Directions

Step 1

Preheat your oven to 325°F (163°C).

In a medium saucepan, combine the coconut milk, heavy cream, and half of the granulated sugar. Warm the mixture over medium heat, stirring occasionally, until the sugar has dissolved. Do not let it come to a boil.

In a separate large mixing bowl, whisk together the eggs, the remaining sugar, vanilla extract, and salt until well combined.

Slowly pour the warm coconut milk mixture into the egg mixture while whisking continuously. This helps temper the eggs and prevents them from curdling.
