Ingredients

  • 500 grams fresh green beans
  • 100 grams unsweetened shredded coconut
  • 75 grams panko breadcrumbs
  • 50 grams all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground paprika
  • 500 ml vegetable oil (for frying)

Directions

Step 1

Wash the green beans thoroughly and trim the ends. Pat them dry using a paper towel.

Step 2

Set up a dredging station with three shallow bowls. In the first bowl, mix the flour, salt, black pepper, and ground paprika. Beat the eggs in the second bowl. Combine the shredded coconut and panko breadcrumbs in the third bowl.

Step 3

Dip each green bean into the flour mixture, coating it lightly. Then, submerge it in the beaten eggs, letting any excess drip off, and finally coat it with the coconut-panko mixture. Repeat until all beans are coated.

Step 4

Heat the vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 175°C (350°F). You can test the oil by dropping a small piece of bread—if it sizzles and browns in about 30 seconds, the oil is ready.

Step 5

Working in batches, fry the coated green beans for 2-3 minutes or until golden brown and crispy. Be careful not to overcrowd the pan.

Step 6

Using a slotted spoon, transfer the fried beans to a plate lined with paper towels to drain any excess oil.

Step 7

Serve the Coconut Crunch Beans warm as a snack or side dish with your favorite dipping sauce!
