Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 100 grams Unsweetened shredded coconut
  • 0.25 teaspoon Cream of tartar

Directions

Step 1

Preheat your oven to 250°F (120°C) and line two baking sheets with parchment paper.

In a clean, dry mixing bowl, add the egg whites and cream of tartar. Using an electric mixer, beat on medium speed until soft peaks form.

Gradually add in the sugar, one tablespoon at a time, while beating on high speed. Continue beating until stiff, glossy peaks form and the sugar has fully dissolved. This may take about 5-7 minutes.

Step 4

Gently fold in the vanilla extract, salt, and shredded coconut using a rubber spatula, being careful not to deflate the meringue.

Scoop tablespoons of the meringue onto the prepared baking sheets, spacing them about 1 inch apart. You can use a piping bag with a round tip for a more uniform shape if desired.

Bake in the preheated oven for 90 minutes. Do not open the oven door during baking to prevent the meringues from cracking.
