Ingredients

  • 2 cups Shredded coconut
  • 1 cup Almond flour
  • 0.33 cup Maple syrup
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 8 ounces Dark chocolate (70% or higher)
  • 1 teaspoon Coconut oil (for chocolate coating)

Directions

Step 1

In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, coconut oil, vanilla extract, and salt.

Step 2

Stir the mixture until it forms a sticky dough-like consistency. If the mixture is too dry, add a couple of teaspoons of water, one at a time, until it holds together.

Line a baking sheet or tray with parchment paper.

Step 4

Using your hands or a tablespoon, scoop out small portions of the mixture and form them into bite-sized balls. Place them on the lined tray.

Freeze the coconut balls for 15 minutes to help them firm up.

While the coconut balls are chilling, melt the dark chocolate and 1 teaspoon of coconut oil in a microwave-safe bowl in 30-second intervals, stirring after each interval, until completely smooth.

Remove the balls from the freezer and, using a fork or a skewer, dip each ball into the melted chocolate, ensuring it is fully coated. Let any excess chocolate drip off before placing the ball back on the parchment paper.

Once all the balls are coated, place them back in the freezer for 10-15 minutes, or until the chocolate is set.
