  • 1 teaspoon Ground coriander
  • 1 tablespoon Fresh lime juice
  • 8 pieces Wooden skewers
  • 1 tablespoon Vegetable oil
  • 120 grams Peanut butter
  • 60 ml Warm water
  • 1 tablespoon Soy sauce (for dipping sauce)
  • 1 tablespoon Honey
  • 0.5 teaspoon Chili flakes (optional)

Directions

Step 1

Cut the chicken breast into thin strips about 2-3 inches long.

Step 2

In a large mixing bowl, combine 240 ml of coconut milk, 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 3 minced garlic cloves, 1 teaspoon each of ground turmeric, cumin, and coriander, and 1 tablespoon of fresh lime juice.

Step 3

Add the chicken strips to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight, to let the flavors infuse.
