Ingredients

  • 4 pieces chicken breasts (boneless and skinless)
  • 400 ml coconut milk (full-fat)
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon curry powder
  • 1 teaspoon paprika
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon coconut oil (or vegetable oil)
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 2 cups rice (optional, for serving)

Directions

Step 1

Heat the coconut oil in a skillet over medium heat. Lightly sear the chicken breasts for 2-3 minutes per side until golden brown. This step is optional but helps to lock in the flavors.

Step 2

Transfer the chicken breasts to the crock pot.

Step 3

In the same skillet, sauté the chopped onion, minced garlic, and grated ginger for 2-3 minutes until fragrant.

Step 4

Add the curry powder and paprika to the skillet, stirring for 1 minute to toast the spices.

Step 5

Pour in the coconut milk and stir to combine, scraping up any browned bits from the skillet. Add the honey, lime juice, salt, and black pepper, then mix well.

Step 6

Pour the coconut milk mixture over the chicken breasts in the crock pot.

Step 7

Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is tender and fully cooked (internal temperature of 165°F/74°C).

Step 8

Once cooked, taste the sauce and adjust seasoning if needed.

Step 9

Serve the coconut chicken over cooked rice and garnish with freshly chopped cilantro.

Step 10

Enjoy your comforting and delicious Coconut Chicken!
