Ingredients

  • 500 grams chicken breast
  • 400 ml coconut milk
  • 1 medium onion
  • 3 garlic cloves
  • 1 tablespoon ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons fresh cilantro
  • 1 optional red chili

Directions

Step 1

Cut the chicken breast into bite-sized pieces. Set aside.

Step 2

Finely chop the onion and garlic. Grate the ginger.

Step 3

Heat the vegetable oil in a large pan over medium heat.

Step 4

Add the onion to the pan and sauté until translucent, about 5 minutes.

Step 5

Add the garlic and ginger. Cook for another minute until fragrant.

Step 6

Stir in the curry powder, ground coriander, and ground cumin. Cook for an additional minute.

Step 7

Add the chicken pieces to the pan and coat them in the spice mixture. Cook until the chicken is lightly browned, around 5-7 minutes.

Step 8

Pour in the coconut milk and stir well to combine. Bring the mixture to a simmer.

Step 9

Reduce heat to low and cover the pan. Let it simmer gently for 15-20 minutes, or until the chicken is cooked through and tender.

Stir in the lime juice, salt, and pepper. Adjust seasoning to taste.

Step 11

If using, slice the red chili and add it to the curry for extra heat.

Step 12

Garnish with freshly chopped cilantro before serving.

Step 13

Serve the coconut chicken curry over steamed rice or with naan bread.
