Ingredients

  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 0.25 cup Light brown sugar
  • 1 Large egg
  • 1 teaspoon Pure vanilla extract
  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1.5 cups Sweetened shredded coconut

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and light brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the bowl, and mix until fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.

Step 6

Fold in the sweetened shredded coconut by hand using a spatula until evenly distributed throughout the dough.

Step 7

Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Lightly flatten each dough ball with the palm of your hand or the back of a spoon to ensure even baking.

Step 9

Bake in the preheated oven for 9-11 minutes, or until the edges of the cookies are lightly golden. The centers will still appear slightly soft.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve immediately or store in an airtight container at room temperature for up to 5 days.
