Ingredients

  • 3 cups sweetened shredded coconut
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional, for chocolate coating)

Directions

Step 1

In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Stir until the mixture is well combined and sticky.

Step 2

Using clean hands or a tablespoon, scoop out small portions of the mixture and roll them into 1-inch balls. Place the balls on a baking sheet lined with parchment paper or a silicone mat.

Step 3

Chill the coconut balls in the refrigerator for at least 30 minutes, or until firm.

Step 4

While the coconut balls are chilling, melt the semi-sweet chocolate chips. You can use a microwave by heating the chocolate chips in 20-second intervals, stirring each time, until fully melted. Alternatively, use a double boiler to melt the chocolate over low heat.

Step 5

If the chocolate is too thick, stir in 1 teaspoon of coconut oil to make it smoother and easier to coat.

Step 6

Remove the chilled coconut balls from the refrigerator. Using a fork or skewer, dip each ball into the melted chocolate, ensuring it is completely coated. Allow any excess chocolate to drip off before placing the coated balls back onto the parchment-lined baking sheet.

Step 7

Once all the coconut balls are coated in chocolate, return them to the refrigerator for about 10-15 minutes, or until the chocolate sets.

Step 8

Serve the Coconut Candy Balls immediately, or store them in an airtight container in the refrigerator for up to 1 week.
