  • 1 cup Evaporated milk
  • 1 teaspoon Vanilla extract
  • 2 cups Grated fresh coconut
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x5-inch loaf pan or two smaller loaf pans.

In a large mixing bowl, sift together the all-purpose flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
