  • 1 can coconut milk

  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 cup beef stock
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp cilantro

Directions

Step 1

Cut the beef stew meat into bite-sized cubes if not already pre-cut. Set aside.

Step 2

Finely chop the onion, mince the garlic, and grate the ginger.

Step 3

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

Add the beef to the pot in batches, searing each batch for 2-3 minutes until browned on all sides. Remove the beef and set it aside.
