Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter
  • 0.75 cups Shredded sweetened coconut
  • 0.5 cups Sliced almonds
  • 0.75 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cups Powdered sugar
  • 2 tablespoons Coconut milk
  • 2 tablespoons Slivered almonds

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Using a pastry cutter or your hands, cut the unsalted butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded coconut and sliced almonds.

Step 5

In a separate bowl, whisk together the heavy cream, vanilla extract, and the egg until fully combined.

Step 6

Pour the wet ingredients into the dry mixture and gently mix until a dough forms. Be careful not to overwork the dough.

Step 7

Turn the dough out onto a lightly floured surface and shape it into a 1-inch thick round disc. Cut the disc into 8 equal wedges and transfer them to the prepared baking sheet.

Step 8

Bake the scones in the preheated oven for 16-18 minutes, or until the tops are golden brown.

Step 9

While the scones bake, prepare the glaze by whisking together powdered sugar and coconut milk until smooth.

Step 10

Remove the scones from the oven and allow them to cool for 5 minutes. Drizzle the coconut glaze over the top and sprinkle with slivered almonds.

Step 11

Serve warm or at room temperature and enjoy!
