  • 2 cups Unsweetened shredded coconut
  • 0.75 cups Sweetened condensed milk
  • 0.25 cups Powdered sugar
  • 24 pieces Whole roasted almonds
  • 1.5 cups Semi-sweet chocolate chips
  • 1 teaspoons Coconut oil (optional)

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat and set aside.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and powdered sugar. Mix until fully combined and sticky.

Step 3

Using your hands or a spoon, shape the coconut mixture into 12 small rectangular logs. Place them on the prepared baking sheet.

Step 4

Gently press two whole roasted almonds onto the top of each coconut log, pressing slightly so they adhere.

Place the baking sheet in the freezer for 20 minutes to allow the logs to firm up.
