  • 0.75 cup Unsalted butter
  • 1.5 cups Granulated sugar
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Almond extract
  • 1 cup Full-fat coconut milk
  • 1 cup Shredded unsweetened coconut
  • 0.5 cup Almond flour
  • 0.5 cup Sliced almonds (for topping)
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer until light and fluffy, about 3 minutes.
