Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 0.5 cup Vegetable oil
  • 2 Eggs, large
  • 1 teaspoon Vanilla extract
  • 0.75 cup Buttermilk
  • 0.75 cup Raisins
  • 0.5 cup Chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners.

Step 2

In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Stir to combine, then set aside.

Step 3

In a separate medium bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until smooth and combined.

Step 4

Add the eggs and vanilla extract to the sugar mixture, whisking thoroughly until well blended.

Step 5

Slowly add the buttermilk to the wet ingredients, whisking until smooth.

Step 6

Gradually fold the wet ingredients into the dry ingredients using a spatula. Mix until just combined, being careful not to overmix.

Step 7

Gently fold in the raisins and chocolate chips until evenly distributed throughout the batter.

Step 8

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 9

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cuffin comes out clean or with just a few moist crumbs.

Step 10

Remove the muffin tin from the oven and allow the cuffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature, and enjoy your Cocoa Raisin Cuffins with a glass of milk or cup of coffee!
