Ingredients

  • 2 cups Rolled oats
  • 1 cup Almonds (chopped)
  • 0.25 cup Cocoa powder (unsweetened)
  • 0.33 cup Honey (or maple syrup)
  • 0.5 cup Peanut butter (or almond butter)
  • 2 tablespoons Brown sugar
  • 2 tablespoons Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 0.33 cup Dark chocolate chips
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (165°C). Line an 8x8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, cocoa powder, and salt. Stir them together until evenly distributed.

Step 3

In a small saucepan over low heat, combine the honey, peanut butter, brown sugar, and melted coconut oil. Stir constantly until everything is melted and well combined. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet mixture into the bowl with the dry ingredients. Stir until all the dry ingredients are evenly coated.

Fold in the dark chocolate chips gently to prevent them from melting too much.

Transfer the mixture to the prepared baking pan. Use a spatula or the back of a spoon to press it down firmly and evenly into the pan.
