  • 1 cup Shredded unsweetened coconut

  • 0.5 cup Chopped dried mango
  • 0.75 cup Chopped macadamia nuts
  • 2 tablespoons Chia seeds
  • 0.75 cup Almond butter
  • 0.5 cup Honey (or maple syrup for vegan option)
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 0.25 cup Dark chocolate chips (optional)

Directions

Step 1

Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a large mixing bowl, combine rolled oats, shredded coconut, dried pineapple, dried mango, macadamia nuts, and chia seeds. Stir well to mix evenly.

Step 3

In a small saucepan over low heat, combine almond butter, honey (or maple syrup), coconut oil, vanilla extract, and sea salt. Stir constantly until the mixture is melted and smooth, about 2-3 minutes.

Step 4

Pour the warm almond butter mixture over the dry ingredients in the mixing bowl. Stir until everything is well-coated and evenly combined.

If using, fold in the dark chocolate chips, making sure to keep the mixture cool enough that the chocolate doesn't melt.
