Ingredients

  • 4 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 1.25 cups Unsweetened coconut milk
  • 6 tablespoons Unsalted butter (melted, divided)
  • 1 large Egg

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.

Step 2

Warm the coconut milk until lukewarm (around 110°F) and whisk it together with 4 tablespoons of melted butter and the egg in a separate bowl.

Step 3

Gradually pour the wet mixture into the dry ingredients and mix until a dough forms. You can use a stand mixer with a dough hook attachment or knead by hand.

Step 4

Knead the dough for about 8–10 minutes until it’s smooth and elastic.

Step 5

Shape the dough into a ball and place it in a greased bowl. Cover it with a clean kitchen towel and let it rise in a warm place for 1 hour or until it doubles in size.

Step 6

After the dough has risen, punch it down to release air. Divide it into 8 equal pieces and roll each piece into a ball.

Step 7

Lightly flour a surface and roll each dough ball into a circle or oval about 6 inches in diameter. Brush half of the circle with some of the remaining melted butter and fold it over to create a half-moon shape.

Step 8

Place the folded dough pieces on a parchment-lined baking sheet, leaving space between them. Cover them loosely with a towel and let them rise for another 30 minutes.

Step 9

Preheat your oven to 350°F (175°C).

Step 10

Bake the coco bread for 15–20 minutes or until they are golden brown. Remove them from the oven and brush them with the remaining melted butter while still warm.

Step 11

Let the bread cool slightly before serving. Enjoy with Jamaican patties or as a standalone snack!
