Ingredients

  • 1 cup Basmati rice
  • 0.5 cup Yellow moong dal (split yellow lentils)
  • 4 cups Water
  • 1 cup Coconut milk (full-fat)
  • 1 large Ripe banana
  • 2 tablespoons Coconut oil
  • 1 teaspoon Cumin seeds
  • 1 piece Cinnamon stick
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Ground ginger
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro leaves (optional, for garnish)
  • 2 tablespoons Toasted coconut flakes (optional, for garnish)

Directions

Step 1

Rinse the basmati rice and yellow moong dal under cold water until the water runs clear. Set aside.

Step 2

In a large pot, heat the coconut oil over medium heat. Once hot, add the cumin seeds and cinnamon stick. Sauté for 1 minute until the spices are fragrant.

Step 3

Add the rinsed rice and lentils to the pot and stir well to coat with the spiced oil.

Step 4

Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let simmer for 20 minutes, stirring occasionally to prevent sticking.

Peel and mash the ripe banana in a bowl. Set aside.

After 20 minutes, add the coconut milk, turmeric powder, ground ginger, salt, and mashed banana into the pot. Stir well to combine.

Continue to cook the kitcheree uncovered for an additional 10-15 minutes, stirring occasionally, until the consistency is creamy and the rice and lentils are fully cooked.

Step 8

Adjust the seasoning with more salt if needed. Remove the cinnamon stick before serving.

Serve warm, garnished with fresh cilantro leaves and toasted coconut flakes if desired.
