Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 units garlic cloves, minced
  • 3 cups butter beans (canned), drained and rinsed
  • 5 cups vegetable broth
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 unit bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly cracked
  • 0.5 cup coconut milk
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3–4 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the butter beans, vegetable broth, thyme, rosemary, bay leaf, salt, and black pepper. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes to allow the flavors to meld together.

Step 6

Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a countertop blender.

Step 7

Stir in the coconut milk and lemon juice, then taste and adjust seasoning, adding more salt or pepper if needed.

Step 8

Serve the soup hot, garnished with fresh chopped parsley. Enjoy!
