Ingredients

  • 1 lb Raw shrimp, peeled and deveined
  • 1 tsp Salt
  • 4 cups Water
  • 2 cups Tomato juice (such as Clamato)
  • 0.3333333333333333 cup Ketchup
  • 3 tbsp Fresh lime juice
  • 2 tsp Hot sauce (like Valentina or Tapatío)
  • 0.25 cup Red onion, finely diced
  • 1 cup Cucumber, peeled, seeded, and diced
  • 1 Roma tomato, diced
  • 2 tbsp Fresh cilantro, chopped
  • 1 Avocado, diced
  • 1 package Saltine crackers or tortilla chips (for serving)
  • 4 Lime wedges (for garnish)

Directions

Step 1

In a medium pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt.

Step 2

Once the water is boiling, add the peeled and deveined shrimp. Let them cook for about 2-3 minutes or until they turn pink and are fully cooked. Do not overcook.

Step 3

Immediately remove the shrimp from the boiling water and transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and chop the shrimp into bite-sized pieces, if desired.
