Ingredients

  • 250 grams All-purpose flour
  • 2 tablespoons Ghee or clarified butter
  • 1 teaspoon Salt
  • 120 milliliters Warm water
  • 300 grams Potatoes, boiled and mashed
  • 50 grams Green peas
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ginger, grated
  • 1 Green chili, finely chopped
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh coriander leaves, chopped
  • 0 for frying Oil

Directions

Step 1

Begin by preparing the dough for the samosa. In a mixing bowl, combine all-purpose flour and salt. Add ghee and mix until the mixture resembles breadcrumbs.

Step 2

Gradually add warm water and knead into a firm dough. Cover the dough with a damp cloth and let it rest for 20 minutes.

Step 3

Next, prepare the filling. Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.

Step 4

Add grated ginger and chopped green chili, and sauté for a minute.

Step 5

Add boiled and mashed potatoes and green peas to the pan. Mix well.

Step 6

Stir in garam masala, turmeric powder, red chili powder, and coriander powder. Cook the mixture for 5-7 minutes, ensuring everything is well combined.

Step 7

Remove the pan from the heat and add lemon juice and chopped coriander leaves. Mix well and let the filling cool completely.

Step 8

Once the dough has rested, divide it into small balls. Roll each ball into a thin oval shape, about 4-5 inches in diameter.

Step 9

Cut each oval into two halves. Take one half and form a cone by bringing the cut edges together, sealing the edge with a little water.

Step 10

Fill the cone with the prepared potato-pea filling, ensuring not to overfill. Seal the open end of the cone with water, pinching the edges to form a triangle.

Step 11

Repeat the process with the remaining dough and filling.

Step 12

Heat oil in a deep pan for frying. Once hot, carefully drop a few samosas into the oil and fry until they turn golden brown and crispy.

Step 13

Remove the samosas with a slotted spoon and drain them on paper towels. Repeat with the remaining samosas.

Step 14

Serve hot with mint chutney or tamarind sauce.
