  • 2 sheets frozen puff pastry sheets
  • 8 ounces cream cheese
  • 4 ounces goat cheese
  • 2 tablespoons fresh chives
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon zest
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons heavy cream
  • 1 large egg
  • 1 cup mixed microgreens
  • 1 teaspoon olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

Step 2

Lightly flour a work surface, then unfold the puff pastry sheets. Roll each sheet out slightly to smooth the folds and thin the pastry.

Step 3

Using a pizza cutter or sharp knife, cut each puff pastry sheet into 2-inch squares. You should have about 24 squares per sheet.

Place the squares onto the prepared baking sheets, leaving space between each piece.

In a small bowl, beat the egg with 1 tablespoon of water to make an egg wash. Lightly brush the top of each pastry square with the egg wash.

Bake the pastry squares for 12–15 minutes, or until puffed and golden brown. Remove from the oven and allow them to cool completely on a wire rack.

While the pastry cools, prepare the cheese filling. In a medium bowl, combine the cream cheese, goat cheese, chopped chives, parsley, lemon zest, salt, black pepper, and heavy cream. Mix until smooth and creamy.

Once the pastry squares are cool, gently slice each square in half horizontally using a serrated knife, creating a top and bottom layer.

To assemble, spread a small dollop (about 1 teaspoon) of the cheese mixture onto the bottom half of one pastry square.

Top the cheese layer with a few microgreens and a drizzle of olive oil.

Place the top half of the pastry square on top, pressing gently to secure it.

Step 12

Repeat with the remaining pastry squares and cheese mixture.

Step 13

Arrange the Cocktail Napoleons on a platter and serve immediately. These are best enjoyed fresh and at room temperature.
