  • 2 pounds pork shoulder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1.5 teaspoons Cajun seasoning
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 1 medium bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 28-ounce can crushed tomatoes
  • 3 cups chicken broth
  • 1 tablespoon hot sauce
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped
  • 3 green onions, chopped
  • 4 cups steamed white rice

Directions

Step 1

Cut the pork shoulder into 1-inch cubes and season with salt, black pepper, and Cajun seasoning.

Step 2

Heat the vegetable oil in a large Dutch oven over medium-high heat. Add the pork and sear until browned on all sides, about 8–10 minutes. Remove the pork and set aside.

Step 3

In the same pot, add the diced onion, bell pepper, and celery. Sauté for 5–7 minutes until softened, scraping up any browned bits from the bottom of the pot.
