Ingredients

  • 2 racks Pork ribs (baby back or spare ribs)
  • 2 cups Coca Cola (not diet)
  • 1 cup Brown sugar
  • 1 cup Ketchup
  • 0.25 cup Soy sauce
  • 4 Garlic cloves (minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Prepare the ribs by removing the silver skin (the thin membrane on the back of the ribs) for better flavor and tenderness.

Step 3

In a small bowl, mix together the onion powder, paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the ribs.

Step 4

Heat the olive oil in a large skillet over medium-high heat. Sear the ribs for 2-3 minutes on each side until lightly browned. This step helps to lock in the flavor.

Step 5

In a medium saucepan, combine the Coca Cola, brown sugar, ketchup, soy sauce, and minced garlic. Stir well and bring the mixture to a simmer over medium heat. Let it cook for 5-7 minutes until slightly thickened.

Step 6

Place the seared ribs into a large baking dish or roasting pan. Pour half of the Coca Cola glaze over the ribs, reserving the rest for later.

Step 7

Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 2.5 to 3 hours, or until the ribs are tender and the meat easily pulls away from the bones.

Step 8

Remove the ribs from the oven and increase the temperature to 400°F (200°C).

Step 9

Brush the remaining Coca Cola glaze generously over the ribs. Place the ribs back in the oven, uncovered, for an additional 10-15 minutes to caramelize the glaze.

Step 10

Remove the ribs from the oven and let them rest for 5 minutes. Slice and serve warm, garnished with fresh herbs if desired.
