  • 2 tablespoons Tomato paste
  • 2 cups Coca Cola
  • 2 cups Beef broth
  • 1 14-ounce can Diced tomatoes (canned)
  • 1 medium Red bell pepper (sliced)
  • 2 medium Carrots (sliced)
  • 3 medium Potatoes (cubed)
  • 2 Bay leaves
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the beef chuck with salt and black pepper, then sear in the hot oil until browned on all sides. Remove the beef and set aside.

In the same pot, add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
