Ingredients

  • 200 g Pitted dates
  • 1 tsp Baking soda
  • 250 ml Coca Cola
  • 75 g Unsalted butter
  • 150 g Granulated sugar
  • 2 large Eggs
  • 250 g All-purpose flour
  • 1 tsp Baking powder
  • 0.25 tsp Salt
  • 1 tsp Vanilla extract
  • 50 g Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 9x5 inch (23x13 cm) loaf pan with parchment paper.

Step 2

Chop the pitted dates into small pieces and place them in a heatproof bowl. Sprinkle the baking soda over the dates.

Step 3

In a small saucepan, heat the Coca Cola until just boiling, then pour it over the dates and baking soda. Stir and let the mixture sit for 10 minutes to soften the dates.

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
