Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter
  • 1 cup Coca Cola
  • 0.5 cup Buttermilk
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Mini chocolate chips (optional)
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or a springform pan and line the bottom with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt until well combined.

Step 3

In a small saucepan over medium heat, melt the butter. Once melted, add the Coca Cola and stir until combined. Remove from heat.

Step 4

Gradually add the warm Coca Cola mixture to the dry ingredients, stirring until just combined.

Step 5

In a separate small bowl, whisk together the buttermilk, egg, and vanilla extract. Pour this mixture into the batter and stir until fully incorporated.

Step 6

If using mini chocolate chips, gently fold them into the batter.

Step 7

Pour the batter into the prepared cake pan, spreading it out evenly.

Step 8

Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Once the cake is cool, dust the top with powdered sugar before serving. Slice and enjoy your Coca Cola Cookie Cake!
