Ingredients

  • 1 large Cucumber

  • 2 large Hard-boiled eggs

  • 6 ounces Cooked roast beef (thinly sliced)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 4 tablespoons Olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 slices Crusty bread (optional, for serving)

Directions

Step 1

Wash and dry the romaine lettuce and arugula. Tear the romaine into bite-sized pieces and place both greens in a large salad bowl.
