Ingredients

  • 4 large Flour tortillas
  • 2 cups Cooked chicken breast, shredded
  • 6 strips Cooked bacon, crumbled
  • 2 cups Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 1 medium Tomato, diced
  • 1 medium Avocado, sliced
  • 3 stalks Green onions, sliced
  • 2 tablespoons Butter, softened
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)

Directions

Step 1

Preheat a large skillet or griddle over medium heat.

Step 2

Spread a thin layer of softened butter on one side of each tortilla. Set aside.

Step 3

In a medium mixing bowl, combine the shredded chicken, crumbled bacon, diced tomato, sliced green onions, and both cheeses. Mix well.

Step 4

Place a tortilla, buttered side down, onto the hot skillet. Spread 1/4 of the chicken mixture evenly over the tortilla.

Step 5

Place a second tortilla, buttered side up, on top of the chicken mixture. Press gently with a spatula to flatten slightly.

Step 6

Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.

Step 7

Remove the quesadilla from the skillet and transfer it to a cutting board. Repeat with the remaining tortillas and chicken mixture to make 2 more quesadillas.

Step 8

Allow the cooked quesadillas to cool for 1-2 minutes before slicing each into wedges.

Step 9

Serve immediately with sour cream, salsa, and sliced avocado on the side.
