  • 1 teaspoon Fresh lemon zest

  • 0.25 cup Mint leaves (optional, for garnish)

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.

In a separate large bowl, beat the eggs using a hand or stand mixer on medium speed until they are pale and fluffy (about 3 minutes).
