Step 1

Preheat your oven to 180°F (82°C). Ensure your oven can maintain a consistent, low temperature. If it cannot, use a cooking thermometer to regularly check during the process.

Pour the heavy cream into a shallow, oven-safe dish with a wide surface area. The cream should ideally form a layer about 1 to 1.5 inches thick in the dish.

Step 3

Place the dish in the preheated oven and let the cream cook for 10 to 12 hours. Avoid stirring or disturbing the cream during this time as it develops its signature thick top layer (clot).

Step 4

After 10 to 12 hours, a yellowish, thick skin will form on top of the cream. This is the clotted cream. Remove the dish from the oven and allow it to cool to room temperature.

Step 5

Once cooled, cover the dish with plastic wrap and refrigerate for at least 8 hours. This step allows the clotted cream to fully set.

Step 6

After chilling, use a spoon to carefully scoop the thick, clotted cream into a separate container. Be sure to leave behind the liquid whey that collects at the bottom of the dish, as it is not part of the clotted cream.

Step 7

Store the clotted cream in an airtight container in the refrigerator for up to 5 days. Serve chilled or at room temperature alongside fresh scones, jam, or other desserts.
