Ingredients

  • 1 cup warm water (about 110°F/45°C)
  • 2 tablespoons granulated sugar
  • 2.25 teaspoons active dry yeast
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (softened)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons Parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • 0.5 teaspoon garlic powder

Directions

Step 1

In a small bowl, combine warm water, sugar, and active dry yeast. Allow it to rest for 5–10 minutes until the mixture becomes frothy.

Step 2

In a large mixing bowl (or stand mixer with a dough hook), combine the all-purpose flour and salt. Stir in the yeast mixture and olive oil. Knead for about 8–10 minutes by hand or 5–7 minutes in a stand mixer, until a smooth, elastic dough forms.

Step 3

Transfer the dough to a lightly greased bowl and cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm place for 1 hour, or until it has doubled in size.

Step 4

Punch down the risen dough and divide it into 4 equal portions. Shape each portion into a 6-inch long sub-style roll and place them on a parchment-lined baking sheet, spaced slightly apart. Cover the rolls with a kitchen towel and let them rise for another 30 minutes.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

In a small bowl, mix the shredded mozzarella cheese, Parmesan cheese, Italian seasoning, dried parsley, and garlic powder.

Step 7

Brush each roll lightly with softened butter, then sprinkle the cheese and herb mixture generously over the top of each roll.

Step 8

Bake the rolls in the preheated oven for 18–20 minutes, or until golden brown and the cheese is bubbly and slightly toasted.

Step 9

Remove the bread from the oven and let it cool for 5 minutes before serving. Enjoy as a standalone snack or use as a sandwich base.
