Ingredients

  • 2 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 1/3 cup Granulated sugar
  • 4 Egg yolks
  • 2 tablespoons Brown sugar

Directions

Step 1

Preheat your oven to 325°F (163°C).

In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in the vanilla extract.

In a mixing bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and creamy.

Slowly pour the warm cream into the egg yolk mixture, whisking constantly to avoid curdling. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.

Divide the custard mixture evenly among four 6-ounce ramekins. Place the ramekins in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
