Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Cooking oil (vegetable or canola)
  • 1 cup Pineapple chunks (canned, drained, reserve juice)
  • 1 medium Red bell pepper (sliced into strips)
  • 1 medium Green bell pepper (sliced into strips)
  • 2 cloves Garlic (minced)
  • 0.25 cup Ketchup
  • 2 tablespoons Soy sauce
  • 3 tablespoons Rice vinegar
  • 3 tablespoons Brown sugar
  • 1 tablespoon Cornstarch
  • 0.25 cup Water

Directions

Step 1

Season both sides of the pork chops with salt and ground black pepper.

Step 2

Heat the cooking oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side until they are browned. Remove from the skillet and set aside.

Step 3

In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the red and green bell peppers to the skillet. Cook for 3-4 minutes, stirring occasionally, until softened.

Step 5

In a medium bowl, whisk together the reserved pineapple juice, ketchup, soy sauce, rice vinegar, brown sugar, and cornstarch dissolved in water to make a smooth sauce.

Step 6

Pour the sauce into the skillet with the bell peppers, stirring until the mixture begins to thicken and bubble.

Step 7

Add the pineapple chunks and stir to combine.

Step 8

Return the pork chops to the skillet, coating them with the sweet and sour sauce. Reduce the heat to low, cover the skillet, and let simmer for 15-20 minutes, or until the pork chops are cooked through and tender.

Step 9

Taste and adjust seasoning if necessary. Remove the skillet from heat.

Step 10

Serve the sweet and sour pork chops over steamed rice, spooning the extra sauce and vegetables on top. Enjoy!
