Ingredients

  • 1 tablespoon unsalted butter (for greasing)
  • 6 medium clementines
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 0.25 teaspoon salt
  • 4 large eggs
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or pie pan with 1 tablespoon of unsalted butter, ensuring the entire surface is evenly coated.

Step 2

Peel the clementines and separate them into segments, removing any seeds if present. Set the segments aside.

Step 3

In a mixing bowl, whisk together the granulated sugar, all-purpose flour, and salt until evenly combined.

Step 4

In another bowl, beat the eggs until frothy, then slowly whisk in the whole milk, heavy cream, and vanilla extract. Gradually add the dry ingredients to the wet ingredients, whisking until you have a smooth batter.

Step 5

Pour a thin layer of the batter into the prepared baking dish and place it in the oven for about 3–4 minutes, or until the batter just starts to set. This helps keep the clementine segments from sinking to the bottom.

Step 6

Remove the dish from the oven and arrange the clementine segments in a single layer on top of the partially set batter. Carefully pour the remaining batter over the clementines.

Step 7

Return the dish to the oven and bake for 35–40 minutes, or until the clafouti is puffed, golden, and a toothpick inserted into the center comes out clean.

Step 8

Remove from the oven and let it cool slightly. The clafouti will deflate as it cools—this is normal.

Step 9

Dust with powdered sugar, if desired, before serving warm or at room temperature. Enjoy!
