  • 2 drops Food coloring (optional)
  • 1 tablespoon Non-stick spray or neutral oil (for molds or parchment paper)

Directions

Step 1

Prepare your workstation by spraying candy molds, silicone mats, or parchment paper with a light coat of non-stick spray or neutral oil. Insert sticks into molds if making lollipops.

Step 2

In a medium, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir gently until just combined, ensuring not to splash the mixture onto the sides of the pan.

Step 3

Place the saucepan over medium-high heat and bring the mixture to a boil without stirring further. Attach a candy thermometer to the side of the pan, ensuring the tip does not touch the bottom.

Step 4

Allow the mixture to cook, undisturbed, until it reaches 149°C (300°F), also known as the hard crack stage. This usually takes about 15-20 minutes. Keep a close eye on the temperature toward the end to prevent burning.

Step 5

Once the hard crack stage is reached, immediately remove the pan from the heat and let the bubbling subside for about 30 seconds.

Quickly stir in the clear food-grade flavoring and optional food coloring, if desired, being careful as the mixture is extremely hot.

Pour the hot syrup into the prepared candy molds or create small drops by carefully spooning onto the greased silicone mat or parchment paper. For lollipops, ensure the sticks are well-coated in the syrup.

Allow the candies to cool completely and harden at room temperature for about 30 minutes.

Once fully set, gently remove the lollipops or drops from the molds or mats. If desired, wrap them individually in cellophane or store in an airtight container to prevent them from absorbing moisture.
