  • 3 cloves garlic cloves, minced
  • 3 cups mixed vegetables (e.g., bell peppers, zucchini, mushrooms, or anything you have), chopped
  • 1 cup tomato sauce or canned diced tomatoes
  • 0.5 cup parmesan cheese, grated
  • 1 tsp herbs (e.g., basil, oregano, thyme, fresh or dried)
  • 0.25 tsp red chili flakes (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

While the pasta cooks, heat 2 tablespoons of oil in a large skillet or sauté pan over medium heat.
